Spaghetti with Walnut Pesto

Ingredients:
  • 1 lb (500 g) spaghetti
  • 1 large bunch fresh basil leaves
  • 2 cloves garlic
  • 15 walnuts, shelled
  • 3 tablespoons pine nuts
  • 1/2 cup (125 ml) extra-virgin olive oil
  • Salt and freshly ground black pepper
  • 1/2 cup (60 g) freshly grated Pecorino cheese

Procedure:
  1. Cook the spaghetti in a large pan of salted, boiling water until al dente
  2. While the pasta is cooking, chop the basil, garlic, walnuts, and pine nuts in a food processor
  3. Gradually add the oil as you chop
  4. Transfer to a small bowl
  5. Stir in the cheese and season with salt and pepper
  6. Drain the pasta and place in a heated serving bowl
  7. Add the pesto and toss gently
  8. Serve hot
