Spaghetti with Sun Dried Tomatoes

Ingredients:
  • 1/4 cup (60 ml) extra-virgin olive oil
  • 3 cloves of garlic, thinly sliced
  • 3 oz (90 g) sun-dried tomatoes, soaked in warm water for 15 minutes, drained and coarsely chopped
  • 1 (14 oz/400 g) can tomatoes, with juice chopped
  • 1 lb (500 g) spaghetti
  • 12 oz (350 g) green beans, trimmed
  • Salt and freshly ground black pepper

Procedure:
  1. Bring a large pot of salted water to a boil over high heat
  2. Heat the oil in a large frying pan over medium heat
  3. Add the garlic and sun-dried tomatoes and sauté until the garlic is pale gold, about 3 minutes
  4. Add the canned tomatoes and cook until is thick, about 10 minutes
  5. Meanwhile, cook the pasta in the boiling water for 5 minutes
  6. Add the green beans and cook until the pasta is al dente and the beans are tender
  7. Drain well and add to the frying pan with the sauce
  8. Season with salt and pepper
  9. Toss gently over high heat for 1 minute
  10. Serve hot
