Spaghetti with Spicy Clam Sauce

Ingredients:
  • 2 lb (1 kg) clams, in shell
  • 1/3 cup (90 ml) extra-virgin olive oil
  • 4 cloves garlic, finely hopped
  • 1 red chile pepper, seeded and chopped
  • 5 ripe tomatoes, cut into segments
  • 1/3 cup (90 ml) dry white wine
  • Salt
  • 1 lb (500 g) spaghetti
  • 3 tablespoons finely chopped parsley

Procedure:
  1. Soak the clam in cold water for 1 hour
  2. Bring a large pot of salted water to a boil over high heat
  3. Put the clams into a large pan over medium heat with a little water
  4. Cook until they open, 5-10 minutes
  5. Discard any clams that do not open
  6. Remove from the heat and discard most of the clam shells
  7. Heat the oil in a large frying pan over medium heat
  8. Add the garlic and chile pepper and saute until the garlic is lightly browned, about 3 minutes
  9. Add the tomatoes and wine, season with salt, and cook until the tomatoes begin to break down, about 15 minutes
  10. Add the clams and stir well
  11. Meanwhile, cook the pasta in the boiling water until al dente
  12. Drain and add to the pan with the clams
  13. Toss over high heat for 2 minutes
  14. Sprinkle with parsley and serve hot
