Spaghetti with Radicchio and Cheese

  • 1/4 cup (60 ml) extra-virgin olive oil
  • 1 large onion, thinly sliced
  • 5 small heads of radicchio, shredded
  • Salt and freshly ground black pepper
  • 1 lb (500 g) spaghetti
  • 1/2 cup (125 ml) heavy (double) cream
  • 8 oz (250 g) Fontina or other mild firm cheese, cut into small cubes
  • 1/2 teaspoon freshly grated nutmeg

Procedure:
  1. Bring a large pot of salted water to a boil over high heat
  2. Heat the oil in a large frying pan over medium heat
  3. Add the onion and saute until softened, about 5 minutes
  4. Add the radicchio and mix well
  5. Lower the heat, cover, and cook until the radicchio is tender, 5-7 minutes
  6. Season with salt and pepper
  7. Meanwhile, cook the pasta in the boiling water until al dente
  8. Drain well and add to the frying pan with the radicchio
  9. Add the cream, Fontina, and nutmeg
  10. Toss over high heat for 2 minutes and serve hot
