Spaghetti with Mushrooms

Ingredients:
  • 1/3 cup (90 ml) extra-virgin olive oil
  • 2 cloves garlic, finely chopped
  • 1 1/2 lb (750 g) button mushrooms, sliced
  • Salt and freshly ground black pepper
  • 8 oz (250 g) pancetta or bacon, cut into small pieces
  • 1 lb (500 g) spaghetti
  • 2 tablespoons finely chopped parsley
  • 1 cup (120 g) freshly grated Pecorino or Parmesan cheese

Procedure:
  1. Bring a large pot of salted water to a boil over high heat
  2. Heat 1/4 cup (60 ml) of the oil in a large frying pan over medium heat
  3. Add the garlic and saute until tender, about 10 minutes
  4. Season with salt and pepper
  5. Heat the remaining oil in a small frying pan over medium heat
  6. Add the pancetta and saute until lightly browned and crisp, 3-4 minutes
  7. Add the pancetta to the frying pan with the mushrooms
  8. Mix well and saute over low heat for 2 minutes
  9. Meanwhile, cook the pasta in the boiling water until al dente
  10. Drain well and add to the frying pan with the mushroom mixture
  11. Toss over high heat for 1 minute
  12. Add the parsley and season with pepper
  13. Sprinkle with freshly grated cheese and serve hot
