Spaghetti with Mint, Garlic, and Olives

Ingredients:
  • 2 cloves garlic, lightly crushed but whole
  • 1/3 cup (90 ml) extra-virgin olive oil
  • 3 anchovies, cleaned and finely chopped
  • 2 tablespoons finely chopped mint
  • 4 tablespoons finely chopped parsley
  • 1 lb (500 g) spaghettini
  • 2 tablespoons capers preserved in brine, rinsed
  • 16 black olives, pitted and chopped

Procedure:
  1. Bring large pot of salted water to a boil over high heat
  2. Heat oil in a large frying pan over medium heat until pale gold, about 3 minutes
  3. Add the anchovies and saute, crushing with a fork, until they have dissolved into the oil, about 5 minutes
  4. Remove from the heat and add mint and parsley
  5. Meanwhile, cook the pasta in the boiling water until al dente
  6. Drain and add to the sauce
  7. Sprinkle with the capers and olives, toss well, and serve hot
