Spaghetti with Meatballs

Ingredients:
Sauce:
1 small onion, finely chopped
1 carrot, finely chopped
1/4 cup (60 ml) extra-virgin olive oil
12 oz (350 g) beef, in a single cut
2 lb ( 1 kg) ripe tomatoes, peeled and chopped
Salt
Meatballs:
12 oz (350 g) ground (minced) beef
1 egg
2 cups (250 g) freshly grated Parmesan cheese
4 cups (250 g) fresh bread crumbs
1/4 teaspoon freshly grated nutmeg
1 cup (250 ml) olive oil, for frying
1 lb (500 g) spaghetti
Procedure:
Sauce:
Saute the onion and carrot in the oil in a large frying pan over medium heat until softened, 5 minutes
Add the beef and saute, until browned all over, 8-10 minutes
Add the tomatoes and season with salt
Simmer over low heat until the meat is very tender, about 3 hours
Remove the meat
It can be served separately after the pasta
Meatballs:
Mix the veal, egg, Parmesan, bread crumbs, and nutmeg in a large bowl until we well blended
Shape the mixture into balls the size of marbles
Heat the frying oil in a large frying pan
Fry the meatballs in small batches until golden brown, 5-7 minutes
Drain on paper towels
Cook the pasta in a large pot of salted boiling water until al dente
Drain and add to the pan with the sauce
Toss well with the meatballs and serve hot
