Spaghetti with Meatballs

Ingredients:
Sauce:
  • 1 small onion, finely chopped
  • 1 carrot, finely chopped
  • 1/4 cup (60 ml) extra-virgin olive oil
  • 12 oz (350 g) beef, in a single cut
  • 2 lb ( 1 kg) ripe tomatoes, peeled and chopped
  • Salt
Meatballs:
  • 12 oz (350 g) ground (minced) beef
  • 1 egg
  • 2 cups (250 g) freshly grated Parmesan cheese
  • 4 cups (250 g) fresh bread crumbs
  • 1/4 teaspoon freshly grated nutmeg
  • 1 cup (250 ml) olive oil, for frying
  • 1 lb (500 g) spaghetti

Procedure:
Sauce:
  1. Saute the onion and carrot in the oil in a large frying pan over medium heat until softened, 5 minutes
  2. Add the beef and saute, until browned all over, 8-10 minutes
  3. Add the tomatoes and season with salt
  4. Simmer over low heat until the meat is very tender, about 3 hours
  5. Remove the meat
  6. It can be served separately after the pasta
Meatballs:
  1. Mix the veal, egg, Parmesan, bread crumbs, and nutmeg in a large bowl until we well blended
  2. Shape the mixture into balls the size of marbles
  3. Heat the frying oil in a large frying pan
  4. Fry the meatballs in small batches until golden brown, 5-7 minutes
  5. Drain on paper towels
  6. Cook the pasta in a large pot of salted boiling water until al dente
  7. Drain and add to the pan with the sauce
  8. Toss well with the meatballs and serve hot
