Spaghetti with Mantis Shrimp

Ingredients:
  • 3 lb (1.5 kg) mantis shrimp, such as cicale (canochie) or substitute regular shrim or lobster
  • Salt
  • 3 cloves garlic, finely chopped
  • 1/3 cup (90 g) butter, cut up
  • 1/4 cup (60 ml) dry white white wine
  • 1 lb (500 g) spaghetti
  • 2 tablespoons finely chopped parsley

Procedure:
  1. Wash the shrimps and remove the eyes
  2. Cut open the bellies with kitchen scissors
  3. Use a teaspoon to remove flesh
  4. Place in a large bowl and set aside
  5. Fill a large saucepan with cold water, season with salt, and add shrimp shells
  6. Boil for 20 minutes, then strain the stock
  7. Saute the garlic in 2 tablespoons of butter in a large frying pan over high heat until pale gold, 1-2 minutes
  8. Add the shrimp flesh and simmer for 5 minutes
  9. Pour in the wine, season with salt, and remove from the heat
  10. Cook the pasta in the strained stock until al dente
  11. Drain, reserving 2 tablespoons of the stock
  12. Add the pasta and the reserved stock to the frying pan
  13. Dot with the remaining butter, letting it melt into the pasta
  14. Sprinkle with parsley and serve
