Spaghetti with Mantis Shrimp

Ingredients:
3 lb (1.5 kg) mantis shrimp, such as cicale (canochie) or substitute regular shrim or lobster
Salt
3 cloves garlic, finely chopped
1/3 cup (90 g) butter, cut up
1/4 cup (60 ml) dry white white wine
1 lb (500 g) spaghetti
2 tablespoons finely chopped parsley
Procedure:
Wash the shrimps and remove the eyes
Cut open the bellies with kitchen scissors
Use a teaspoon to remove flesh
Place in a large bowl and set aside
Fill a large saucepan with cold water, season with salt, and add shrimp shells
Boil for 20 minutes, then strain the stock
Saute the garlic in 2 tablespoons of butter in a large frying pan over high heat until pale gold, 1-2 minutes
Add the shrimp flesh and simmer for 5 minutes
Pour in the wine, season with salt, and remove from the heat
Cook the pasta in the strained stock until al dente
Drain, reserving 2 tablespoons of the stock
Add the pasta and the reserved stock to the frying pan
Dot with the remaining butter, letting it melt into the pasta
Sprinkle with parsley and serve
