Spaghetti with Lemons and Black Olives

  • 1/2 cup (125 ml) extra-virgin olive oil
  • Zest of 2 lemons, cut into julienne strips
  • Freshly squeezed juice of 2 lemons
  • 1 1/2 cups (150 g) pitted black olives, coarsely chopped
  • 16 basil leaves, torn
  • Salt and freshly ground black pepper
  • 1 lb (500 g) spaghetti

Procedure:
  1. Bring a large pot of salted water to a boil over high heat
  2. Beat together the oil, lemon zest, lemon juice, black olives, garlic, and basil in a large bowl
  3. Season with salt and pepper
  4. Cook the pasta in the boiling water until al dente
  5. Drain well and add to the bowl with the sauce
  6. Transfer to a serving dish
  7. Serve hot
