Ingredients:
1 onion, finely chopped
1/4 cup (60ml) extra-virgin olive oil
1 1/3 cups (160 g) diced bacon
6 large eggs
1/3 cup (90 ml) heavy (double) cream
Salt and freshly ground black pepper to taste
3/4 cup (90 g) freshly grated Pecorino or Parmesan cheese
1 lb (500 g) spaghetti
Procedure:
Bring a large pot of salted water to a boil over high heat
Saute the onion in the oil in a small saucepan over medium heat until lightly browned, 2-3 minutes Add the bacon and saute until crisp, about 5 minutes
Remove from the heat and set aside
Beat the egg yolks and cream in a large bowl
Season with salt and pepper and sprinkle with the Parmesan
Cook the pasta in the boiling water until al dente
Drain and add to the bacon
Return to high heat, add the egg mixture, and toss briefly so that the eggs lightly but are still creamy
