Linguine with Spicy Tomato Sauce

  • 1 1/2 lb (750 g) ripe tomatoes, peeled and coarsely chopped
  • 1 1/3 cup (90 ml) extra-virgin olive oil
  • 2 cloves garlic, lightly crushed but whole
  • 1 dried red chile pepper, crumbled
  • 3 drops Tabsco sauce
  • 1 teaspoon spicy paprika
  • Salt
  • 1 lb (500 g) linguine
  • 3/4 cup (90 g) freshly grated Pecorino or Parmesan cheese

Procedure:
  1. Bring a large pot of salted water to a boil over high heat
  2. Heat the oil in a frying pan over medium heat
  3. Add the garlic and saute until pale golden brown, about 3 minutes
  4. Remove and discard the garlic
  5. Add the tomatoes and cook over high heat until the tomatoes begin to break down, about 25 minutes
  6. Add the chile pepper, Tabasco and paprika
  7. Season with salt, mix well, and remove from the heat
  8. Meanwhile, cook the pasta in the boiling water until al dente
  9. Drain and transfer to a serving dish
  10. Sprinkle with the cheese
  11. Add sauce and toss well
  12. Serve hot
