Linguine with Seafood Sauce

{{KB}} Ingredients:
  • 1 lb (500 g) squid or cuttlefish, cleaned
  • 2 cloves garlic, finely chopped
  • 1/2 cup (125 ml) extra-virgin olive oil
  • 6 shrimp (prawns), shelled, leaving the head on
  • 1 lb (500 g) linguine
  • 1/2 cup (125 ml) dry white wine
  • Salt
  • 6 cups (1.5 liters) fish stock, boiling

Procedure:
  1. Bring a large pot of salted water over high heat
  2. Cut the squid bodies into small chunks and slice the tentacles in half
  3. Heat the oil in a large frying pan over high heat add the garlic and saute until pale gold, about 1-2 minutes
  4. Add the squid, jumbo shrimp, crayfish, and shrimp and cook over medium heat for 5 minutes
  5. Cook the pasta for half the time indicated on the package in the boiling water
  6. Drain and add to the sauce
  7. Pour in the wine, season with salt, and cook, gradually adding the fish stock and mixing occasionally until the pasta is al dente
  8. Season with salt and serve hot
