Linguine with Pesto, Potatoes, and Beans

Ingredients:
  • 14 oz (400 g) green beans, chopped
  • 1 lb (500 g) linguine
  • 6-8 new potatoes, cut into small cubes
  • 1 quantity pesto
  • 3 tablespoons extra-virgin olive oil
  • Freshly ground black pepper
  • 1 oz (30 g) Parmesan, cut into flakes
  • Sprigs of basil, to garnish

Procedure:
  1. Bring a large of pot salted water to boil over high heat
  2. Cook the green beans in a pot of salted boiling water until almost tender, 3-4 minutes
  3. Drain and set aside
  4. Cook the linguine in the boiling water for 5 minutes
  5. Add the potatoes and cook until the pasta is al dente and the potatoes are tender, about 7-8 minutes more
  6. Drain well, reserving 3 tablespoons of the cooking liquid, and transfer to a large serving bowl
  7. Add the oil and the reserved cooking liquid to the pesto
  8. Spoon over the pasta and potatoes, add the green beans and toss well
  9. Season with pepper
  10. Sprinkle with Parmesan
  11. Garnish with basil and serve hot
